Festive Finger Food: How to Utilize Christmas Leftovers into NYE Canapes
What kinds of bite-sized appetizers can I whip up for New Year’s Eve using my Christmas remaining food that will still seem festive?
Party snacks doesn't have to be elaborate, so New Year's presents a perfect chance to clear the decks. The main guideline is to stick to items to just one bite—no one wants to manoeuvre a fork. Guests just want a big hug of comfort food with a luxurious touch.
If you have a bit of cured fish left, layer it on blinis and top it with affordable roe. Small patties are also an ideal choice: If you have remaining fish or hot smoked salmon, mix it through mashed potato, blend with dill, citrus, and caramelized onions, then coat in panko and deep-fry.
You could also get creative with Spanish croquettes. Make the bechamel up to days ahead, then use remaining pork, chicken, or mushrooms for the interior. Whizz old bread into crumbs to coat them, then cook until crisp. Sausage roll mixtures are another natural home for those crumbs, or use them as a jacket for bite-sized chicken. Seasoning-wise, all you need a bit of lemon zest and thyme, and they'll sing so much more. Incidentally, croissants make superb crumbs, too.
One beloved treat at this time of year is a post-holiday sandwich, and that can continue after Boxing Day. Get some ham and turkey in an sealed tub and store in the freezer. While you're at it, reserve some berry relish and honey ham glaze in the refrigerator. When needed, thaw the meat, then place it in a hot oven with the saved glaze for a short time. Cool and cut into thin pieces, then lay on top of some sourdough and assemble sandwiches with lots of cranberry sauce. Slice into small squares for a surefire hit.
Remaining poultry, meanwhile, could be turned into a spicy, crisp salad. There’s always a bit of dark meat left over, and it's perfect for something punchy. Pull the meat, then fry it slowly in a pan, and mix with leftover cranberry sauce thinned with lime juice, a dash of soy sauce and a little chilli oil. Finish with chopped herbs and some sliced spring onion, and serve in small lettuce cups.
Transforming Leftover Vegetables
Veg, meanwhile, can be scrubbed up and ready to party with a big batch of fried potato cake. Combine all your leftover veg with fresh herbs, then season and add flour. Stamp out portions to roughly the size of blinis, then store in the freezer. Refresh in a preheated oven for a few minutes and finish with your choice of topping—perhaps roast beef and sharp horseradish. A word to the wise, though: save a stash for brunch the next day.
